This week we all enjoyed the latest trend in mixology, the molecular cocktail. The cocktail of the week is the Vessel 75. This drink was inspired by Dave’s favorite drink, the Old Fashion and is made in two parts. The first part is the foam which is made with 4 egg whites, two shots of Canadian maple syrup (for the sweetness), four shots of lemon juice and six ounces of water. You want to mix this in an actual whip cream canister and use N2O versus CO2 as the N2O makes a tighter bubble. When this is all in the canister, chill in the fridge. Next take three ounces of a good bourbon and mix with a liberal dash of bitters, shake with ice and strain into a cocktail glass. Then layer the foam on top. Garnish with an orange rind.
